This delicious & easy date loaf recipe was provided by the wonderful ladies of CWA Woy Woy. This cake is great served on its own or toasted with lashings of butter.

Date Loaf
1 ½ cup chopped dates
¾ cup sugar
115g butter, at room
temperature
½ tsp bicarbonate of soda
1 cup boiling water
1 egg
1 ¾ cup self-raising flour
1 tsp ground cinnamon
Method
Heat oven 160°C. Grease a loaf tin and line the base with baking paper.
Place dates, sugar, butter and bicarb in a bowl and add the cup of boiling water.
Set aside to cool to just warm. Add the egg, lightly beaten, sifted flour and cinnamon, and stir into the wet ingredients until fully combined.
Pour into the cake tin and smooth the top. Bake for 50 to 60 minutes or until the cake feels firm to a gentle touch in the centre. Cool for 10 minutes in tin before turning out onto a tea towel covered cake rack.
